From Foodservice to Retail
Seafood International

March 2006

Soup and shellfish specialists for three generations, Rhode Island-based Blount Seafood Corporation takes a big step in a new direction with the introduction of a line of fresh retail soups, as well as a new take on processed clams.

‘Traditionally our soups have gone only to foodservices,’ says F Nelson (Todd) Blount, president of the more than 50-year-old company. While the soups, mostly-seafood based, will be sold under the Blount Signature Soups labels, much of the line will be produced for private labels in retail chains.

The company will also introduce ‘Fusion Clams’ for foodservice, an IQF frozen sea-clam meat infused with a ‘secret marinade’ to make the product more tender, says Mr. Blount.

Along with the 12 22oz (624g) bags of infused clams, the company will provide a one-pint (568ml) bottle of concentrated sea clam broth.

‘Usually clams are sold in cans and chefs use clam broth from the cans in their recipes,’ says Mr. Blount.

We provide a bottle of clam broth and our IQF product becomes a ‘canned clam equivalent.’
