Roasted Corn & Clam FrittersMakes 2-3 dozen fritters. Ingredients1 lb. clam cake mix 1 ½ to 1 ¾ cup cold water (see instructions on clam cake mix) 3 cups Blount frozen IQF Chopped Sea Clam Meat 2 cups IQF frozen roasted corn ¼ cup Blount Sea Clam Broth Concentrate 1 cup maple syrup (fancy or Grade AA) InstructionsMix all ingredients in large bowl and let stand for 5-10 min. Gently fold to remove any air pockets. Pre-heat deep fryer to 350F. Using a No. 40 or 60 scoop (about 1 Tbsp.), drop scoops of mixture into deep fryer.
Deep fry for 3-4 min., until golden brown. To cook evenly, turn fritters while frying. Drain fritters on absorbent paper. Serve while hot on a pool of warmed maple syrup. Blount Products Used in ths Recipe |
